Ethiopia Beloya (Natural) is produced and processed by smallholder farms located in Kochere district in the Yirgacheffe region of Ethiopia. The Beloya washing station lies also in the Kochere District; just north of Chelelektu, and 45km from Dilla. The washing station uses water from the local river system to wash the cherries, making the location incredibly important to the local coffee industry.
The coffee is grown at high altitudes (between 1,900 and 1,950masl) in iron rich soils with a spread of genetic diversity provided by the heirloom varietals. Coffee farmers use traditional pest control methods that have been in use for many years, and so organic production is commonly found.
Smallholder farmers in the hills surrounding the washing station will bring the shade grown cherries to the mill for careful sorting. Only the ripest are selected. The cherries are fermented in sealed tanks for 120 hours and then dried in the sun on raised African beds for up to 21 days. The 12 fermentation tanks and more than 136 raised beds allow for lot management to ensure traceability. In the daytime they are raked and turned periodically to ensure a consistent drying process. The cherries are covered between 12pm and 3pm to protect them from sun damage and at night time to protect them from rainfall and moisture. Once the coffee has dried to the right level it is milled, graded, sorted and thoroughly handpicked, before being bagged in GrainPro for export from the port of Djibouti; located at the crossroads of one of the busiest shipping routes in the world, linking Europe, the Far East, the Horn of Africa and the Persian Gulf.
