Nicaragua SantaLuz - Red Honey is grown one of the micro-lot farms found within the SantaLuz Coffee estate in the mountains of Matagalpa, just 4 kilometers from El-Tuma. The farm spans over 158 hectares of land, with 85 hectares currently dedicated to coffee, the rest remains as wild and beautiful woodland providing shade for coffee trees and encouraging natural ecosystems. The Santa Luz estate has proudly been Rainforest Alliance Certified since 2003 and continues to improve on its ecological practices.

 

The coffee is grown on west facing slopes in volcanic soil at the top of the collection of farms within the estate, the cherries are picked by hand when ripe, processed and then dried at a consistent low temperature to create the fruity characteristics. The estate is the only one in the country with fully integrated production processes; they plant, produce, harvest, process, classify and market/export all of the green coffee beans directly from the farm to their final destinations around the world. Due to this quality and traceability is guaranteed across all micro-lots. Throughout the last 16 years the SantaLuz Estate have re-planted their farms with new and diverse coffee varieties and rebuilt the infrastructure on the land, including living quarters, roads, coffee mills and transporting equipment. The Red Honey processing gifts this coffee with beautifully complex fruit flavour profiles, a process that has become increasingly popular among coffee producers in Nicaragua.

 

Honey Processing is the method in which a portion of the cherry mucilage is left on the coffee beans during the washing process, Red honey processing is an extension of this where a lot more mucalage is left on the beans, producing a fuller-bodied coffee.

Perfect for brewing in pretty much every way you can, the SantaLuz Red Honey makes for a syrupy sweet and intricately fruity brew, with tasting notes of Marmalade, Pineapple, Peach & Honey. Roasted to a light/medium, with a focus on highlighting the undeniable natural sweetness of this coffee, definitely not one to miss!
